Ingredients:

Blue Bully BBQ RUB

Blue Bully BBQ Sauce

Haloumi Cheese
-
1 Eggplant
-
2 Slices Sourdough Bread
-
Mayonnaise
-
1 Tomato (Sliced)
-
Olive Oil
-
Fresh Basil
-
Salt
Directions:

Cut eggplant into thick slices. Cover both sides with salt and let drain on paper towels for 30 mins. Pat Dry.

Preheat a grill or grill pan to high heat. Coat haloumi and eggplant slices in olive oil, sprinkle with BBQ rub. Place on hot grill, move coals /reduce heat to medium. Grill for 2 to 3 minutes per side, or until well-charred.

Toast bread slices. Mix equal parts BBQ sauce and mayonaise. Spread on each slice of bread.

Assemble sandwich by layering grilled haloumi, eggplant, sliced tomatoes, and fresh basil. Serve with extra BBQ aioli on the side.


Mix it up!
Grill halloumi and eggplant as described above. Chop grilled cheese, eggplant and tomatoes, add to a bed of spinach. Prepare the aioli, drizzle on top for a salad dressing. Top with basil leaves.
